Step 1: Gather Your Ingredients

To make jollof rice, you will need the following ingredients:

  • 2 cups of long-grain rice
  • 1 can of diced tomatoes
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes (optional)
  • 2 cups of chicken broth or water
  • Salt and pepper, to taste
  • 2 tablespoons of vegetable oil

Step 2: Cook the Rice

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Add the diced tomatoes and red pepper flakes (if using) and cook for an additional 2 minutes.

Add the rice to the pot and stir to combine. Add the chicken broth or water, and bring the mixture to a boil.

Reduce the heat to low, cover the pot, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.

Step 3: Add the Spices

Add salt and pepper to taste. You can also add other spices such as cumin, curry powder, or thyme.

Step 4: Fluff the Rice

Remove the pot from the heat and fluff the rice with a fork. Cover the pot again and let it sit for 5 minutes to allow the rice to continue steaming.

Step 5: Serve and Enjoy

Your jollof rice is now ready to be served. It can be enjoyed on its own, or topped with grilled chicken, shrimp, or fried plantains.
